Good Monday morning, y’all! I hope everyone had a wonderful weekend. Mine was great! The Duke and I found time to lounge by the pool Saturday, which was wonderful. Yesterday I had the great pleasure of cooking for my sweet friend Heather’s bridal shower. Heather’s boss hosted the shower in her GORGEOUS home, and the kitchen was outrageous. I felt like I was on the Food Network, cooking in front of a live audience. I’ll post pictures and recipes of the shower later this week, so be sure to tune in.
I actually created this cookie for the shower. I was planning on making peanut butter mousse for our dessert, and knew I wanted chocolate cookies to go along with it. While searching for a good chocolate cookie recipe, I found this yummy creation for Chocolate Cherry Cookies on Picky Palate. Jenny is the cookie queen, and comes up with some killer cookies. I basically followed her recipe (minus the cherries), but didn’t use as much cocoa as she did. I also found chocolate covered peanuts on major sale at Walgreens. They made the perfect mix-in to go alongside the peanut butter mousse. You really have to check back later in the week for the mousse recipe. It will change your life. Period. End of story.
Chocolate Covered Peanut Cookies
Ingredients
- 2 sticks butter, softened
- 1 cup sugar
- ¾ cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 cups flour
- 1 scant cup cocoa powder (I used somewhere between ¾ cup and a cup, because that was all I had in the pantry…it came out just fine)
- 2 tsp. baking soda
- 1 tsp. salt
- 13 oz. bag chocolate covered peanuts
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream butter and sugars until fluffy. Beat in eggs, one at a time, then vanilla.
- In a small bowl, whisk together flour, cocoa powder, baking soda and salt. Slowly add dry ingredients into wet, until fully incorporated. Stir in peanuts.
- Scoop dough by rounded tablespoons onto an ungreased cookie sheet. Bake for 10-11 minutes. Cookies should be slightly soft in the middle.
- Remove from oven, and allow to cool on cookie sheet for 5 minutes before cooling on wire rack.
Makes about 30 cookies
