Happy Saturday, blogosphere! I hope all is well with you. While I am happy it is Saturday, I am actually being held captive in an 8-hour test review today, which is no fun. I’m taking the General Knowledge test in November, in anticipation of becoming a real teacher one day! I figure 8 hours of elementary reading and writing is better than having to take the test more than once, ya know? You are more than welcome to feel sorry for me today. I feel sorry for me. Especially when there is college football for the taking.
Since you are free as a bird on this football Saturday, here are two tasty treats for you to try. I love creating fun and tasty rice crispy treats. It’s just so easy to mix different things in with the rice, but this time I figured it couldn’t hurt to swap out the rice crispies for popcorn. I made a huge batch with butterscotch, chocolate and peanuts, and brought them in for my fellow teachers. I got rave reviews! Last week I did the same recipe, but with the traditional rice crispies, and again, rave reviews. Now you try!

Mmm…Popcorn version

Mmm…Rice Crispy version
Rich and Sticky Snack Bars with Chocolate and Butterscotch
Ingredients
- 6 cups rice crispies or popped popcorn (I used 100 calorie kettle corn packs)
- 4 tbsp. butter
- 1 bag mini marshmallows
- 1 cup chocolate chips
- 1 cup butterscotch chips
- 1 cup peanuts
- 4 oz. chocolate almond bark for garnish, optional
Instructions
- In a large Dutch oven over medium heat, melt butter and marshmallows together until smooth and creamy.
- In a large bowl, combine popcorn, chocolate chips, butterscotch chips and peanuts.
- Stir popcorn mixture into marshmallow mixture, until all ingredients are well combined (work quickly…this is very sticky!).
- Pour mixture into a greased 9×13 pan and smooth with the back of a greased spatula.
- If using, melt almond bark according to package instructions and drizzle over bars. Allow to cool completely, then cut into bars.
Makes 30 bars
