Good Monday morning, everyone! I hope you all had a restful weekend. The weather here in Northwest Florida proved to be perfect. It’s still about 90 degrees and sunny here, so the Duke even managed to squeeze in some backyard pool time yesterday. Both of our football teams won on Saturday, so life is good here! On another note, my precious Granny Flash was taken to the hospital Friday for some internal and external bleeding (bad mental image, sorry), so please keep her in your thoughts and prayers. She’ll be 84 on October 18th, and I’d love to have her around for many more years!
I was rummaging through the fridge/pantry/freezer last week and noticed I had all of the ingredients for Chicken Parmesan. I thought I’d put a twist on the classic by making it into a burger. I love playing around with new burger ideas. It’s just so fun (not to mention easy) to combine flavorful ingredients with ground meat and serve it on some sort of bread. These burgers came together very fast, making them a great week-night meal. You could also make them into sliders or even meatballs.

Open-Faced Chicken Parmesan Burgers on Garlicky Ciabatta
Ingredients
- 2 lbs. ground chicken
- 2/3 cup Italian breadcrumbs
- 2 tsp. garlic salt
- ½ tsp. cracked black pepper
- ½ tsp. red pepper flakes
- ½ tsp. dried basil (fresh would be great, also)
- ½ cup grated parmesan cheese
- 1 (28 oz. ) can diced tomatoes with basil, garlic and oregano
- 6 slices mozzarella cheese
- 3 ciabatta rolls-I found whole grain ciabatta rolls at Walmart
- olive oil
- garlic salt for dusting
Instructions
- Set outdoor grill or indoor grill pan over medium-high heat. Spray with non-stick cooking spray.
- In a large bowl, combine chicken, breadcrumbs, garlic salt, pepper, pepper flakes, basil and parmesan cheese. Once all ingredients are well incorporated, divide equally into 6 patties.
- Grill patties for about 5-6 minutes per side, flipping once.
- While burgers cook, preheat broiler to high.
- Remove burgers from grill, and divide tomatoes equally over patties, then top with one slice of mozzarella each.
- Put patties on a greased jellyroll pan, and place under broiler for 2-3 minutes (watch closely so the cheese doesn’t burn).
- Split the ciabatta rolls and toast. Drizzle with olive oil and sprinkle wit a pinch of garlic salt.
- Place one patty over one half of a ciabatta roll and serve with garden salad
Makes 6 burgers
