Happy Saturday! Am I the only one that thought the work week would NEVER end? Don’t get me wrong, I love my Pre-K students, but this was a loooooooong week. Thankfully it’s all over and today is Saturday, which can only mean one thing; College Football! My beloved Gators have a bye this week (for you non-sports fans, that means they don’t have a game), but the Duke’s Crimson Tide are taking on the Kentucky Wildcats. Roll Tide Roll!
Now that there is a slight nip in the air, I thought I’d share this warm and hearty beef soup with you. It involves a crock pot and a few cans…how easy is that? I thought I’d give the traditional French Onion Soup that we all love a spicy Southwest twist. Incase you can’t tell, I love Southwest and Mexican flavors. We eat it once or twice a week around here. I even worked at a local Mexican restaurant during high school and still go there at least once a month! I could seriously eat Mexican three times a day. Anyway, back to the soup. It’s chock full of beans, onions, beef and cheese. If that doesn’t light your fire your wood must be wet!
Smoky Chipotle Beef and Onion Soup
Ingredients
- 2 lbs. beef stew meat
- Pinch salt and pepper
- 2 small onions, thinly sliced
- 1 can pinto beans, with juices
- 1 can kidney beans, with juices
- 1 can chili tomatoes, with juices
- 1 small can diced green chilies
- 1 (7 oz.) can chipotle slasa (found on the Mexican aisle)
- 1 cup beef broth
- 2 tsp. garlic salt
- ½ tsp. cumin
- 2 cups shredded cheddar or pepper jack cheese
- Tortilla chips
Ingredients
- Season beef with salt and pepper. Set in bottom of a large crock pot and cover with onions
- Pour in beans, tomatoes, chilies, salsa and broth
- Season all ingredients with garlic salt and cumin
- Cover and cook on low for 6-8 hours
- Pre-heat broiler to high
- Ladle soup into oven proof bowls. Top each with cheese and tortilla chips
- Broil for 2 minutes, or until cheese is melted and bubbly
Serves 6

We are Mexican/TexMex food junkies too. Been eating a lot of homemade Salvadorian food hubby’s co-workers bring in…and wow.
