Good Monday to ya, folks. I hope you all had a wonderful weekend. The Gators came away with an important victory over LSU on Saturday! The game wasn’t all that thrilling, but the Gators didn’t allow the Tigers to score a single touch down, so I’m quite pleased. We remain the # 1 team in the nation for yet another week. We’ll see how long our boys can hang on. In other news, the Duke and I actually purchased a coffee table and a rug for our foyer yesterday. We’ve been searching for both since we moved into our house four months ago! I’m so happy we finally made a decision.
In honor of the number one team in the land, I’m sharing everyone’s favorite cookie ball with you. I’m sure you’ve all seen cookie or cake balls before. They’re just so gosh darn easy, and make such a cute presentation. I decided to use Nutter Butter cookies and blue almond bark so the balls would be orange and blue for my Gators. They really turned out quite cute. You can tell I got a bit tired of dipping the balls, so I whipped out my piping bag and went to town with swirls and even “Go Gators.” The picture of that came out blurry, so just use your imagination. You can use any creme filled cookie you like for these. The Duke’s favorite is Oreo balls and they look really pretty with a white chocolate shell. Try them! I dare you.
Nutter Butter Cookie Balls
Ingredients
- 1 package Nutter Butter cookies
- 8 oz. cream cheese, softened
- 1 (14 oz.) package candy melts or almond bark, any color
Instructions
- In a food processor, crush cookies into crumbs.
- In a large bowl, beat cream cheese and cookie crumbs until well combined and crumbs are moistened. You may need to add a tablespoon or two of softened butter if the mixture isn’t sticking together.
- Roll mixture into tight teaspoon sized balls. Place on a cookie sheet lined with wax paper and chill for 2 hours.
- In a microwave safe bowl, melt almond bark according to package directions. Set aside to cool.
- Using spoons or lollipop sticks dip balls into melted almond bark, shaking off any excess.
- Place on wax paper until almond bark has set.
Makes about 3 dozen balls

I LOVE making cookie balls. I’ve made them with oreos and red velvet cake before, but this flavor looks sooo good.
