Oh happy day! This weekend (thankfully) flew by. I volunteered from 7:30am until 10:30pm on Saturday in the freezing cold weather at the Best of the Emerald Coast food and wine event! It was our first truly chilly weather of the season. Not only was it in the 50s and 60s (this is cold for us Florida folks!), but it was extremely windy. My face and lips are incredibly chapped after standing outside all day. The event went really well, and I think it ended up bringing in a lot of money for the Junior League of the Emerald Coast, which was the ultimate goal. I know it was a charity event, but I’d been looking forward to getting it over with since April. Therefore, I am now in a state of elation! On another note, yesterday we celebrated my sweet Granny’s 84th birthday at our house. I made Paula Deen’s Seafood Pot Pie and a good ole fashioned buttermilk pie and my mom made her famous caesar salad. I got rave reviews on the pot pie from the Duke and my dad, so I’ll be sharing that recipe next week.
Now, onto another Paula Deen recipe. I like to think that Paula and I would be good friends if we ever met. I always refer to her as Ms. Paula. It’s just what I do. I really think that we’re kindred spirits and destined to meet at some time in our lives. Until then, I’ll just continue to cook her buttery recipes and think of witty things to say to her.
I’m just now getting around to another My Girl, Paula challenge. I’ve just been so busy! This is a really cute and easy recipe for rice crispy treats and is perfect for Halloween. I made these last weekend when we had friends over for football and they gobbled them right up. My friend Shaun, who claims to be a rice crispy treat expert, said these were some of the best he’d ever had. I’ll take that as a culinary victory. The colors of the candy corn are really cute peaking out from behind the rice crispies. The kids can help you with these sweet treats, and they can even take them into school for upcoming fall parties.
Paula Deen’s Crispy Rice Candy Corn Treats
Ingredients
- 4 tbsp. butter
- 1 bag mini marshmallows
- ¼ tsp. salt
- 1 tsp. vanilla
- 6 cups Rice Crispies
- 1 bag candy corn, coarsely chopped
Instructions
- Spray a 13×9 glass baking dish and rubber spatula with non-stick spray.
- Melt butter in a medium sized saucepan over low heat. Once melted add marshmallows, salt, and vanilla. Stir continuously until the marshmallows have reached a smooth consistency. Remove from heat and fold in the cereal and candy corns until completely coated.
- Add the mixture to the greased baking dish and smooth out evenly. Cool before cutting into squares.
