Morning, cupcake! I hope everyone had a wonderful week. The Duke and I are waking up in Tuscaloosa this Saturday morning. The Tide takes on the Vols of Tennessee today. Bama should win, but it isn’t over til the fat lady sings, right? Regardless, the Duke is giddy with excitement, being back in his old stomping grounds.
Speaking of the Duke, he is the mastermind behind today’s recipe. If anyone on this earth loves coffee, it’s him. He drinks at least three cups every morning and loves desserts with coffee. He wanted cupcakes last weekend, and had the bright idea of adding coffee to the butter cream. He’s too funny, though. He didn’t realize that butter cream frosting consisted of butter and powdered sugar only…he said he was grossed out, but that didn’t last long. This coffee icing is delicious and is a nice flavor for the holidays. It would also be great on gingerbread cookies. Give it a try! It couldn’t be easier.
Perfect Cupcakes with Coffee Butter Cream
Ingredients
- Any flavor cake mix, plus ingredients called for on package
- 1 stick softened butter
- 2 cups powdered sugar
- 2 tbsp. brewed and cooled coffee
- cocoa powder for garnish
Instructions
- Prepare and bake cup cakes according to package instructions, set aside to cool.
- In a large bowl, beat butter and powdered sugar until smooth and creamy. Fold in coffee until mixed through.
- Ice cupcakes and sprinkle with a dash of cocoa powder.
Makes 12 cupcakes

That’s too funny that The Duke didn’t realize buttercream was made of butter and sugar! Duh, what did he think was in there?
It’s always funny when people are amazed at how much butter goes into a frosting; they think it’s only a few spoons or so!
