Is it Monday already? How does the weekend go by so fast? Just one more day, please! What’s that you say? It’s already November? How did this happen? Where has 2009 gone?? Sometimes I feel like my life is flying past me and I can’t catch up. Speaking of that, I’ve got lots of homework to finish up, so I’ll make this post short and sweet. This is a quick and delicious rice casserole that is perfect for your busy weeknights. We love Mexican flavors in our house and this dish of turkey, peppers, onions, beans, rice and cheese hits the spot for us! I think your family will enjoy these scrumptious flavors, also.
Cheesy Mexican Turkey and Rice Bake
Ingredients
- 1 lb. ground turkey
- ½ onion, chopped
- ½ bell pepper, chopped
- 1 package taco seasoning
- 1 can kidney beans
- 1 can Rotel
- 2 cups cooked brown rice (you can certainly use white rice if you prefer)
- ½ cup light sour cream
- 1 cup shredded cheddar cheese, divided
- tortilla chips, salsa and sour cream for serving
Instructions
- Preheat the oven to 350 and spray a 9×13 casserole dish with non-stick spray.
- In a large skillet, brown turkey with onions and peppers. Drain off any excess fat and stir in taco seasoning.
- Transfer turkey mixture to a large bowl and combine with beans, Rotel, rice and sour cream. Stir in ½ cup of the cheese.
- Pour casserole into prepared dish and top with remaining cheese.
- Bake for 20-25 minutes, or until cheese is gold and bubbly.
- Serve with crushed tortilla chips, sour cream and salsa, if desired.
