Happy Monday! This weekend wasn’t all that great. My number 1 Florida Gators suffered a miserable loss to the Alabama Crimson Tide in the SEC Championship game. The Duke went to Alabama, so it hurts even more. The Tide will compete against Texas for the National Title in Pasadena in January. I half-heartedly say Roll Tide.
Onto more important business. I stumbled upon the Mrs. Kringles Cake ‘n Crumbs Holiday Cookie Bakeoff hosted by Brooke at Tongue-N-Cheeky and I knew I had to compete. Her blog is super cute and you must pay her a visit. The theme of the contest is Santa’s Favorite Cookies. I’d been dreaming up a peanut butter snickerdoodle type cookie for a while, so I knew this was the perfect time to debut it. While at the grocery store, I decided to make a creamy, dreamy white chocolate filling for the cookies…kinda whoopie pie-esque, if you will. I was really happy with the results! Peanut Butter Snickerdoodle Sandwiches with Snowy Centers
Ingredients
- 1 cup butter, softened
- 1/3 cup peanut butter
- 1 ½ cup sugar
- 2 large eggs
- 3 cups flour
- 2 tsp. cream of tartar
- 1 tsp. soda
- ¼ tsp. salt
- 2 tbsp. sugar
- 2 tsp. cinnamon
- ½ cup butter, softened
- 12 oz. white chocolate, melted and cooled
- 3 cups powdered sugar
- 3 tbsp. milk
Instructions
- Pre-heat oven to 400 degrees.
- In a large bowl, beat butter, peanut butter and sugar until creamy. Beat in eggs, one at a time, until well combined.
- In a separate bowl combine flour, cream of tartar, soda and salt. Slowly incorporate dry ingredients into wet ingredients.
- In a small bowl combine sugar and cinnamon.
- Roll cookie dough into one-inch balls, and then roll balls in cinnamon sugar.
- Place balls on ungreased cookie sheet and bake for 8-10 minutes. Allow to cool on cookie sheet for 3 minutes before transferring to a cooling rack.
- While cookies cool, combine softened butter and melted white chocolate. Beat in powdered sugar until all ingredients are combined. Filling will be thick at this point, so add milk to thin.
- Pipe filling onto 25 cookies, then top with remaining 25 cookies.
Makes 25 sandwich cookies

Can not wait to try these. Sound yummy, yummy, yummy Wonder if I will make it to the new year without jumping 2-4 sizes. Oh well, worth every cookie bite I take. Enjoy these but triple the recipe for your “drop in friends and family.” Can’t wait for the next goodie from “Duchess of Fork”. She is a winner.
