Happy Monday, Blogosphere! Hope y’all had a great weekend. Mine was fantastic, but busy. The Duke and I hosted our 1st Annual Christmas Party on Saturday night and it was a smashing success! Our house was filled with about 25 of our closest friends, lots of booze and, of course, great food. Wouldn’t you know that in the chaos of it all I completely forgot to take any pictures of the festivities? I was planning on sharing it with you all, but no can do. Please forgive me.
It’s hard for me to concentrate this week. It’s our last week of school before Christmas break. I’m soooo ready for 2 weeks off, but school is jam-packed this week. We visit Santa’s Workshop today, have our Winter Feast on Wednesday and our class party and staff party on Thursday. Whew! Not to mention, the Duke and I fly out to San Francisco on Friday for 5 days. I’m super pumped about the trip (it’s my first time to Northern CA), but I feel like I’ve got a million things to do before then. Oh, wait. I DO have a million things to do before then.
When deciding what to add to your holiday baking list this year, be sure to include these decadent treats. They’re similar to magic bars, but I used a cookie crust instead of graham crackers. Can we say yum? You’re going to totally dig these. For real.
Triple Chip Cookie Bars
Ingredients
- 1 pouch sugar cookie mix
- ½ cup softened butter
- 1 egg
- 1 cup butterscotch chips
- 1 cup chocolate chips
- 1 cup white chocolate chips
- 1 cup chopped pecans or walnuts
- 1 cup sweetened flaked coconut
- 1 can (14 oz) sweetened condensed milk
Instructions
- Preheat oven to 350 degrees. Spray a 9×13-inch pan with cooking spray, set aside.
- In a large bowl, combine cookie mix, butter and egg. Press into bottom of pan and bake for 15 minutes.
- Remove from oven and sprinkle with chips, nuts and coconut. Drizzle with condensed milk.
- Bake 30-35 minutes longer, or until golden brown. Cool and cut into squares.
Makes 36 bars
