Good Monday morning to you! I’m so happy that I have today off. Thank you, Dr. Martin Luther King, Jr.! You certainly made your mark in American history and paved the way for future generations. Even though I have the day off, I’m spending it studying for my FTCE K-6 test. I’m hoping and praying that I can pass it on the first try (January 30th-wish me luck!).
So, I’ve had a bag of dried lentils in my pantry forever. They stare at me every time I look inside, begging to be cooked. After weeks of ignoring them, I finally pulled them out during our unseasonable cold snap last week. I’d never cooked with them before, but the thought of a warm and hearty lentil soup was dancing in my head. I did a quick internet search and found this simple recipe from Bella on the Beach. I knew I didn’t want anything difficult-just something where I could dump all the ingredients in the crock pot and go. Bella’s recipe was a great foundation for me. I made some minor tweaks and it was delicious!!! So simple and absolutely perfect on a cold Winter night.

Comforting Lentil Soup
Ingredients
- 1 medium onion, sliced
- 2 carrots, sliced
- 2 ribs celery, sliced
- 1/4 tsp black pepper
- 1 1/2 tsp salt
- 1 tsp. cumin
- 1/2 tsp dried thyme
- 3 bay leaves
- 3 medium garlic cloves, minced
- 2 cups dry lentils
- 6 cups chicken broth
- 2 cups chicken stock
- Grated parmesan cheese, optional
Instructions
- Place the onion, carrots and celery into the slow cooker.
- Add the salt, pepper, cumin, thyme, bay leaves and garlic.
- Next, add lentils and cover with broth and stock.
- Stir and set slow cooker on low for 6 hours.
- Remove bay leaves and adjust with more salt and pepper to taste.
- Top with grated parmesan cheese, if desired.
Serves 6

Just thinking about this soup makes me want to make it again! I can’t even tell you how perfect and comforting it is after a long and cold day. You should definitely make some soon!
