Happy Hump Day! I’m bummed that the ground hog saw his shadow yesterday. Who really needs six more weeks of winter? I mean, I live in sunny Florida, and I’m tired of the 50-degree weather we’ve had for the last few months. I’m ready for beach and boating weather, ya know??
Well, in an effort to usher in the warm weather early, here’s a super fun and ultra easy chicken burger recipe for you. With the Super Bowl just a few days away, this will be the perfect healthy addition to your artery-clogging line up. I found the recipe for a Hawaiian Turkey Burger on Our Best Bites, so I used that as the base and altered it slightly. This burger is rather healthy, but is packed with major flavors like pineapple, ginger and teriyaki sauce. You could also make some cute sliders out of the recipe. Everyone loves bite size food for parties.

Hawaiian Chicken Burgers
Ingredients
- 1 lb ground chicken
- ½ cup quick oats
- ½ cup minced red or green bell pepper
- ½ cup sliced green onion
- 1 tsp. finely chopped fresh ginger root
- ½ tsp. salt
- ½ tsp. cayenne pepper
- 1 can pineapple rings, juices reserved
- Reduced sodium teriyaki sauce
- lettuce, tomato, whole wheat buns
Instructions
- In a large bowl, gently combine chicken, oats, bell pepper, green onions, ginger, salt and pepper. Mix in ¼ cup pineapple juice.
- Form into four large patties and chill until ready to cook.
- Heat a grill pan over medium-high heat. Once hot, spray with cooking spray. Cook patties about 5 minutes per side, or until cooked through. Baste with teriyaki sauce in the last 5 minutes of cooking.
- While burgers cook, grill pineapple rings for a few minutes per side, until grill marks appear.
- To serve, place burgers on toasted buns. Top with one pineapple ring, lettuce and tomato, if desired.
Serves 4

These burgers are so tasty and you can certainly feel good about eating one. I ditched the bun for mine and served it atop a huge green salad. They’d also be great alongside some oven-baked sweet potato fries. The Duchess
