Happy Friday, people! This was one looooong week for me. I don’t know what’s up, but I’ve been so very tired lately. I’ve been getting at least 7 hours of sleep every night, so I really don’t understand. At any rate, I’m really looking forward to sleeping in tomorrow.
Ok, so I’m really excited about sharing this beautiful biscotti recipe with you. They look like they took all day and night, but truth be told, they started out with cake mix! Can you believe it? I have a fabulous cookbook called The Cake Mix Doctor, in which every recipe starts with a box of cake mix. That book has saved my behind many a times. I based this recipe on one from the book.
I’d never made biscotti before, but could not believe how easy they were! They’re slightly time-consuming, so just make sure you plan on being home for a few hours when you want to make these. Here is my pre-baked biscotti log (studded with Valentine M&Ms):

Nice and shiny! After baking for half an hour, this is how your loaf should look:

Big and beautiful, folks! At this point you slice the log into thick strips, then bake it again for 10 minutes. Then you turn the oven off and let the biscotti do their biscotti thing. I broke each of my strips in half and drizzled them with pink candy melts. Get a load of these bad boys!

Red Velvet Biscotti Beauties
Ingredients
- 1 package (18.25 oz) Red Velvet cake mix
- 1 stick melted butter
- 2 large eggs
- 1 cup flour
- 1 cup Valentine M&Ms
- 1 bag pink Wilton candy melts
Instructions
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
- Place cake mix, butter, eggs and flour in a large mixing bowl. Blend with an electric mixture on low speed until well blended, about 3-4 minutes. Scrape down sides of bowl if necessary. Fold in M&Ms.
- Transfer mixture to baking sheet and form into a rectangle (14 inches long by 4 inches wide by ½ inch high). Mound the dough so it is slightly higher in the center of log.
- Bake biscotti until a toothpick comes out clean, about 30-35 minutes. Remove from oven and cool on baking sheet for 10 minutes.
- Cutting on the baking sheet, use a serrated knife to cut rectangle into 1-inch thick slices (you should get about 14 slices). Carefully turn slices on their sides and return to oven.
- Bake biscotti for 10 minutes, then turn oven off. Keep biscotti in oven until they are crisp, about 30 minutes.
- Remove from oven and allow to cool completely (at this point I broke each biscotti in half, because they were so long-it’s your preference).
- While biscotti cool, melt candy melts according to package directions. Drizzle over biscotti in desired designs.

Aren’t they good looking? I wrapped two cookies in a clear bag and tied it up with a Valentine ribbon. Needless to say, my coworkers were delighted to see these treats in the morning. Biscotti go perfect with coffee or hot chocolate. I still can’t get over how simple these are. They’re such show-stoppers, and I certainly plan on making more in the future.

These look soooo good! Unfortunately we just have regular M&M’s here in Holland, they don’t sell special M&M’s like they do in U.S.A. around Halloween, Christmas, Valentine’s Day and the Fourth of July. At the most they add some orange M&M’s to the regular package when there’s a European Championship or World Championship for Soccer. Orange is out National colour: we wear it on Queen’s Day (30th of April) and at when a national team plays at some sort of Championship or Olympic Games….
I need to make this IMMEDIATELY!
