The title of this post pretty much sums up my day. The other night while the Duke and I were watching the Olympics on the couch, we heard a scratching noise coming from the ceiling. After a bit of investigation, we learned we have new roommates…rats! Oh, the joys of home ownership. So how does one go about getting rid of rats in the roof?

Rat traps with peanut butter! Apparently I have the same taste as rats. If you want to catch me and haul me out of your house, just lure me with peanut butter. Anyhoo, the brave and macho Duke put our two peanut buttered traps in the attic after dinner tonight. He also did our dishes. What a great guy.

When he saw me taking pictures of the traps, he asked me if I was going to share pictures of the dead rats on the blog, also. I think I’ll spare you all and NOT show those. But guess who’s lined up to retrieve the dead rats from the ceiling? That would be moi.
On another note, I recently discovered the best way to easily cook up chicken. I love having extra cooked chicken on hand for quesadillas and casseroles. It just makes weeknight meals come together in a flash. I think I found this recipe in a Diabetes Prevention magazine, or something similar. Forgive me for not remembering! At any rate, you put four chicken breasts in a crockpot, then cover with a cup of chicken broth and packet of dry Italian dressing mix. Cook on low for about 5-6 hours, and voila! Perfectly moist and delicious chicken that’s ready for any meal.

I cooked three HUGE breasts using this method today, and shredded them right up. It was enough for a quick couscous toss tonight and we’re planning on making quesadillas with the rest tomorrow. We’ve done this type of thing with a whole chicken before, but the skin makes everything very greasy. These breasts are the way to go!!
