Good Saturday morning, friends!! I had the most wonderfully lazy evening last night. I was POOPED from subbing all week in Pre-K, and all I wanted to do was lounge on the couch. And that, my friends, is exactly what the Duke and I did. We kept flipping between ice dancing and What Not to Wear. Are we cool, or what?
So, I have a confession. I’m slightly afraid of cooking Asian cuisine. The Duke and I love Thai food and other Eastern-inspired dishes, but I’m always intimidated by the mile-long list of ingredients. I’ve only tried cooking maybe a handful of Asian dishes our 11 months of marriage. I figured the time had come to put my childish fear aside and face Asian food head on!
A few months back I bought the Cooking Light 5 Ingredient 15 minute cookbook that is overflowing with fabulous recipes! I marked a recipe for Mongolian Beef and finally decided to go for it this week. The entire recipe calls for 9 basic ingredients. I only had to purchase one specialty Asian ingredient, so I knew it would be manageable. I altered one small thing from the original recipe (using lots of white onion slices instead of green onions), and the result was a fantastically spicy and hearty beef dish that the Duke and I both enjoyed.

Mongolian Beef
Ingredients
- Cooking Spray
- 1 pound flank steak or sirloin cut into thin slices (I used sirloin)
- ½ cup white onion, very thinly sliced
- 1/3 cup hoisin sauce
- 2 tbsp. water
- 2 tsp. minced peeled fresh ginger
- 1 tsp. bottled minced garlic
- 2 tsp. dark sesame oil
- ½ tsp. crushed red pepper
Instructions
- Heat a large skillet over medium-high heat. Coat pan with cooking spray and add steak and onions. Cook about three minutes, or until steak is browned and liquid has almost evaporated.
- Combine hoisin sauce, water, ginger, garlic, sesame oil and pepper in a small bowl. Add sauce mixture to pan and cook one minute, or until sauce is slightly reduces. Be careful not to overcook steak.
- Serve with brown rice and steamed broccoli.
Serves 4

This was such a flavorful meal and I was thrilled by how quickly it all came together. I used quick-cooking brown rice and Steam Fresh broccoli for super-fast sides.
