Three cheers for Friday!
Who’s with me? I, for one, am thrilled that the weekend is within site. Another long, but wonderful week at Liza Jackson Preparatory School is history. It’s supposed to be sunny all weekend, so I plan on parking myself on the beach with a good book.
With Mother’s Day just around the corner, I thought I’d show you a simple and show-stopping biscotti recipe. Biscotti may seem fancy and time-consuming, but my version starts with pineapple upside down cake mix…what could be easier? I dress up the boxed stuff with toasted coconut and white chocolate. The result is a beautiful cookie that Mom will love to dip in her tea or coffee (when you bring her breakfast in bed).

Just drizzle some candy melts over the top, and these little babies look like they came from a bakery.

Pineapple White Chocolate Biscotti with Toasted Coconut
Ingredients
- 1 package (18.25 oz) Pineapple Upside Down cake mix
- 1 stick melted butter
- 2 large eggs
- 1 tsp. pineapple extract
- 1 cup flour
- 1 cup white chocolate chips
- 1 cup toasted coconut
- 1 bag white Wilton candy melts
Instructions
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
- Place cake mix, butter, eggs, extract and flour in a large mixing bowl. Blend with an electric mixture on low speed until well blended, about 3-4 minutes. Scrape down sides of bowl if necessary. Fold in chips and coconut.
- Transfer mixture to baking sheet and form into a rectangle (14 inches long by 4 inches wide by ½ inch high). Mound the dough so it is slightly higher in the center of log.
- Bake biscotti until a toothpick comes out clean, about 30-35 minutes. Remove from oven and cool on baking sheet for 10 minutes.
- Cutting on the baking sheet, use a serrated knife to cut rectangle into 1-inch thick slices (you should get about 14 slices). Carefully turn slices on their sides and return to oven.
- Bake biscotti for 10 minutes, then turn oven off. Keep biscotti in oven until they are crisp, about 30 minutes.
- Remove from oven and cool completely (at this point I broke each biscotti in half, because they were so long-it’s your preference).
- While biscotti cool, melt candy melts according to package directions. Drizzle over biscotti in desired designs.
I just think the presentation of these biscotti is top-notch. No one will now how easy they are! I think mom will definitely be impressed.

Wrap them up in cellophane bags with festive ribbons for an extra special presentation.

The Duke and I will actually be in NYC with my parents for Mother’s Day this year. My mom’s birthday falls on Mother’s Day (May 9th), so we’re taking her to lunch at Bobby Flay’s Bar Americain and then to see Promises, Promises on Broadway (starring my favorite Broadway actress, Kristin Chenoweth). Your trip to NYC sounds amazing. My Husband and I are headed up there with his parents in July and I told him that is the one restaurant I want to go to. Have fun!
