The title of this post really says it all. As you know, we’re in the process of moving. Our closing actually got moved up to next Wednesday, so I guess that’s good. I’m really sick of packing, though. I like the idea of being in a new and exciting space, but actually loading up and moving out is driving me crazy! I wish there was a packing fairy that would come visit me. It would make my life so much easier.
Since this has been a crazy week from hell, dinner has been really simple (AKA cereal most nights). I had a spark of energy the other night, though, and decided to use up some chicken and other ingredients from the fridge. You know the Duke and I love Mexican food, so I threw together a Chicken Fajita Hoagie.

Talk about simple. This dinner came together in about 20 minutes. I’m talking start to finish here, folks. I did have a cooked chicken breast on hand, which simplified the situation. The crusty bread was a delicious departure from a tortilla for the fajita flavors.

Toasted Chicken Fajita Hoagie Melts
Ingredients
- 1 tbsp. olive oil
- 1/2 onion, sliced thin
- ½ bell pepper, sliced thin
- ½ tsp. garlic salt
- ¼ tsp. black pepper
- ½ tsp. oregano
- 1 whole wheat hoagie roll, split
- 1 chicken breast, cooked and shredded
- ½ cup grated cheddar cheese
Instructions
- Heat a skillet over medium heat.
- Once skillet is hot, add olive oil and onions. Cook until onions are translucent; about 8-10 minutes. Add bell peppers, salt, pepper and oregano and cook for another 4-5 minutes.
- While peppers and onions cook, slice hoagie roll and lightly toast.
- Sprinkle a small amount of cheese over toasted bread, then top with chicken, peppers and onions. Divide remaining cheese evenly among both slices of bread.
- Broil hoagies, open-faced, for about 5 minutes, or until cheese is melted and bubbly.
- Serve with salsa and sour cream.
Makes 2 open-faced hoagies
I mixed 1/2 cup light sour cream with the juice of 1 lime, 1 tbsp. green salsa, a pinch of garlic salt and a handful of chopped cilantro for quick dipping sauce. The sauce was delicious! The Duke and I dipped a few too many tortilla chips in it.

Alright friends. Tomorrow is officially moving day. It’s strange that tonight is the last time I’ll be sleeping in this house. The Duke and I adore this house, but we’re excited to see what the future holds.
