Since I didn’t share my menu last week due to my Chobani giveaway, I thought I’d share it this week. It worked out great, because I was able to photograph my meals so now you’ll have something pretty to look at!
I must say, we enjoyed some pretty delicious dinners last week.
MONDAY: Blackened chicken with cilantro lime quinoa and avocado cream

Oh my goodness, I can’t say enough about this meal. From start to finish, everything was delicious! I made a few changes- I baked the chicken breasts (instead of cooking in a pan) for about 30 minutes and I used sour cream in the avocado cream instead of yogurt. The avocado cream is sooooo good!
TUESDAY: chicken quesadillas (I made extra blackened chicken on Monday), refried beans
WEDNESDAY: Pot roast with potatoes, carrots and onions

Oldie, but goodie. I use the recipe on the Lipton Onion Soup box.
THURSDAY: leftovers
FRIDAY: Salsa chicken and quinoa stacks with MORE avocado cream!

SATURDAY: Ruth’s Chris

Our good friends, Patrick and Laura, treated us to dinner before their baby girl arrives. We enjoyed seared filets with garlic mashed potatoes, steamed asparagus and sweet potato casserole. Oh, and chocolate explosion cake!
SUNDAY: Grouper Bienville with quinoa and roasted zucchini

I’m sharing the recipe for this very soon! Pan fried grouper with lump crab meat? Yes, please!

That avocado cream looks so good I may lick my computer screen. Kidding. Sort of.
And, I think I need to try quinoa! I’ve never made it but it seems to be a staple at your house… is it more like rice or noodles? Hmm!

Have you ever had couscous, Meredith? It tastes very similar, in my opinion. It’s more closely related to rice than pasta I’d say.

Ok! That first one with the chicken and Quinoa looks DELISH! I’ve never made Quinoa but I’m thinking I might need to try it! And…that avocado cream looks FABULOUS!!!! Thanks for the inspiration! I might have to step outside of my usual comfort zone!

I make avocado cream all the time! Sometimes I add cilantro and it’s SO DELICIOUS. If I make a giant salad for lunch, I’ll just put avocado cream on top sometimes and use it for the dressing. I’m also loving posting what we ate vs. what we’re going to eat. GREAT IDEA!!

I made your crockpot BBQ chicken for Anna yesterday and extra for us. That’s on the menu for tonight. (By the way, she said it was delish!)
Tuesday: Baked salmon with Salmon Magic seasoning, quinoa, green beans
Wed: Turkey and brown rice stuffed bellpeppers (from Sweet Tooth Sweet Life)
Thurs: Breakfast for dinner (biscuits, grits, eggs over med, sauteed spinach)
Fri: CA Pizza Kitchen frozen margarita pizza
I eat quinoa several times a week. I add the Better than Bouillon mushroom base to the cooking water. It’s great!
