Holy cow, can you believe I’m writing a Weekly Eats post? We’ve been eating dinner, I just haven’t shared our menu in at least a month. I’m terribly sorry. I hope you’ve been able to get along without pictures of my food.
Last week was pretty tasty. It’s been raining here so much lately that I made soup twice. And wouldn’t you know, it ended up being sunny all week.
MONDAY: Cajun Chicken Tortellini Bake, salad, wheat rolls
This was such a great dinner! I took lots of photos and plan on sharing the recipe soon. I tossed wheat cheese tortellinis with sauteed onions, peppers, chicken, Creole seasoning and sharp white cheddar. Delicious.
TUESDAY: Roasted Chicken Noodle Soup and salad
This soup is always a winner. It tastes like Thanksgiving in a bowl.
WEDNESDAY: Chicken Taco Soup with all the fixin’s
I used Paula Deen’s recipe but subbed ground chicken for beef. This is seriously the best soup ever. It’s like kicked up chili and is absolutely gut-busting. Oh, and I make it in the slow cooker.
THURSDAY: Leftovers
FRIDAY: Sauteed shrimp, half-a$$ mac and cheese, salad, wheat rolls
This was the last of my beautiful bay shrimp from the freezer.
Shrimp makes for a quick supper because it cooks up so fast.
SATURDAY: Chipotle Chicken Phyllo Roll Ups with Avocado Cream, Succotash
I was pretty excited to try this Rachael Ray recipe but it was a big, fat disappointment. The phyllo dough took forever to work with and the roll ups were way too greasy after baking. Yuck! I usually love RR recipes, but not this one. My succotash (onions, bell peppers, yellow zucchini, sweet corn) was absolutely delicious and the avocado cream is always a winner.
SUNDAY: A big bowl of yogurt with fruit and Kashi
What are you cooking this week? I need ideas in a bad way. Any lite meals?

I hate when a recipe sounds awesome and doesn’t turn out at all. I have it happen sometimes on the rare occasion I try something totally new. Hopefully it’s something you can tweak and change to turn it into something to put in rotation!

I made a RR phyllo rollup years ago for appetizers and ended up causing a fire in my oven!!! (I am afraid of phyllo now!)
I am so off on my meal plan this week. I think I’m going to make tomato soup for tonight and paninis. Some night this week I plan on making linguini with clam sauce, but I really don’t know which night, have so many school activities this week so I am going to have to think of stuff that is quick and easy!
PS…that tortellini bake sounds so so good!!!
