Weekly Eats

Another week has come and gone- can you believe it? Last week’s meals were delicious. I actually stuck to my meal plan every day! I feel very proud and accomplished when that happens.

MONDAY: Buffalo chicken cobb salads

This is such a great meal! I used my go-to recipe for oven baked chicken tenders, then just tossed them in some Frank’s Red Hot sauce. I piled the salads up with edamame, boiled eggs, tomatoes, carrots, scallions, craisins, and avocado.

TUESDAY: His and Hers flatbread pizzas

Another easy meal that can be as healthy as you like. I use these wheat flat breads and the Duke and I topped ours with whatever we wanted. Onions, pepperonis and extra cheese for the Duke, mushrooms, zucchini, olives, sauteed onions and a few turkey pepperonis for me. :)

WEDNESDAY: Tomato, basil and cheese baked pasta and a “salad” of raw zucchini, tomatoes, scallions, and romano dressing

A friend from church made this pasta for us after Julia was born and we loved it. I’ve tried to recreate it a few times since then but it’s never been as good as hers. I added a layer of Italian sausage this time (you know the Duke can’t have a meal without meat).

THURSDAY: Leftovers for the Duke, black bean burger with taco toppings for me

So simple and delicious. Easily my favorite meal all week.

FRIDAY: Teriyaki chicken and veggies at Sakura :)

I’m always pleasantly surprised when a dish is lighter than I’m expecting. This teriyaki sauce was more of a broth- not at all heavy. And the steamed broccoli, cabbage and carrots were spot on.

SATURDAY: Tailgate food! Dips, dips, and more dips

SUNDAY: Cajun Chicken Tortellini Bake, green beans, sliced tomatoes

When I made this recipe a couple weeks ago, I froze enough for another meal. I must say, this dish freezes really well! I think it was even better after a little time in the ice box.

    Your meals always look so tasty!! We’re having pork loin, turkey burgers, and crockpot chicken tikka masala. With lots of roasted veggies. So glad that fall is around the corner
