Is hell freezing over?! I’m finally writing a Weekly Eats post! I don’t know how I’ve let a few months slip by without posting our dinners.
I hate to keep you waiting one minute longer, so here’s what we ate last week:
MONDAY: Buffalo Chicken Cobb Salad
Simple, delicious, healthy
TUESDAY: Leftover baked tenders, baked sweet potato fries, sauteed zucchini
WEDESDAY: Asian turkey meatballs (Skinny Taste), steamed edamame, couscous
One of my go-to light meals. I don’t think the Duke likes it quite as much as me, but oh well.
THURSDAY: Veggie nachos
I make these for lunch all the time. Simply pile any veggies you like on tortilla chips- I like to use black beans, spinach, zucchini and corn. Top with shredded cheese and bake, then top with shredded lettuce, cilantro, tomatoes, salsa and light sour cream.
FRIDAY: Italian baked chicken thighs, wheat elbows with sauteed zucchini and parmesan cheese
This was a random clean out the fridge/freezer/pantry meal that ended up being delicious. I marinated the skinless thighs (but they had they bone) in Italian dressing mix before baking.
Saturday: We munched all day as we watched football
SUNDAY: Roasted chicken noodle soup (Cooking Light)
Another favorite! I’ve made this soup at least 15 times and it never gets old.

I love the Skinny Taste Asian Turkey meatballs! I always make the dipping sauce so John can drown them. He loves them too once slathered in sodium.
