I honestly don’t remember which nights we ate what last week, but we had some tasty meals. Here’s a rundown:
3 Ingredient Turkey Burgers with baked sweet potato fries
This is such a great meal that never disappoints. The Duke had been wanting a burger, so I made my tasty turkey version that’s just ground turkey, Montreal steak seasoning, and Worcestershire sauce. I love mine on a wheat bun with lettuce, tomatoes, pickles, ketchup and mustard. Hold the onions and mayo, please.
Turkey Divan with brown rice and steamed string beans
I made this a day or so after Thanksgiving with leftover turkey and froze it until last week. It’s such a great freezer meal! I winged the recipe but it’s chopped turkey (or chicken), with broccoli and a light cream sauce (a little butter, flour, skim milk and chicken broth), topped with wheat bread crumbs and a little parmesan.
Turkey Chili
I guess it was the week of turkey, huh? You can’t beat chili and I always use the McCormick slow cooker seasoning packet.
Loaded spuds with leftover chili, sauteed onions and zucchini
Holy yum! We eat a ton of leftovers in this house (thankfully the Duke doesn’t mind), but I try to jazz them up whenever I can. This was a gut-busting healthful meal that really hit the spot. I always forget about turning a baked potato into a whole meal. It’s just so darn good.

We’re moving in a couple weeks, so it’s Operation Clean Out the Pantry/Freezer/Fridge around here! I’ll be getting creative, I’m sure.

Just posted ours. I love those turkey burgers so much! They make be going on next week’s menu. We haven’t had them in awhile.
