My classroom is really coming along, so I&#8217;ll be sure to post pictures soon. <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>The Duke and I have really been taking advantage of the grill lately. We love throwing zucchini, onions and peppers on and letting them get a good char. Want to know my favorite meat to grill? Smoked sausage! It&#8217;s delish.</p>

<p>Our friend brought us this smoked sausage that he picked up on a back country road between Birmingham, AL and Destin. No tellin&#8217; where it came from, but this sausage was awesome!</p>

<h2>Summertime Mixed Grill</h2>
<h3>Ingredients</h3>
<ul>
<li>2 lbs. smoked sausage</li>
<li>2 medium zucchini</li>
<li>2 large sweet onions</li>
<li>2 bell peppers</li>
<li>Olive oil</li>
<li>Salt and Pepper</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Preheat grill to medium-high heat. Brush the grill racks with vegetable oil.</li>
<li>Slice sausage and zucchini in half length wise, then cut into 2-3 inch chunks.</li>
<li>Cut onions into thick rings, then seed and core the peppers and cut into thick slices.</li>
<li>Rub the veggies with olive oil and sprinkle with salt and pepper.</li>
<li>Place sausage, zucchini, onions and peppers on the grill. Cook, turning once, until veggies are soft and sausage is crispy, about 8-10 minutes.</li>
<p> Serves 4

It&#8217;s been in the 90s every day, and I swear the humidity is nearly 100%! <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  Whew, it&#8217;s definitely been a hot, hot summer around here. Even though the temperatures have been through the roof, it hasn&#8217;t stopped me from craving a warm bowl of soup. There&#8217;s just something so comforting about a big pot of soup simmering on the stove, no matter the season.</p>
<p>I&#8217;ve been wanting to make Rachael Ray&#8217;s Salsa &#8220;Stoup&#8221; for a while now and finally got around to it the other day. As Rachael would say, it was Delish!</p>

<p>It really tastes like salsa, but piping hot. The onions, peppers and cilantro make this tomato soup for grown ups. <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I made some grilled poblano and zucchini quesadillas for dipping, and this meal was a home run.</p>

<h2>Kickin&#8217; Salsa Stoup</h2>
<h3>Ingredients</h3>
<h3>Adapted from Rachael Ray</h3>
<ul>
<li>2 tbsp. olive oil</li>
<li>2 jalapeno peppers, seeded and chopped</li>
<li>1 green bell pepper, cored, seeded and chopped</li>
<li>1 large onion, chopped</li>
<li>3 celery ribs, chopped</li>
<li>3 garlic cloves, chopped</li>
<li>1 ½ tsp. salt</li>
<li>1 tsp. cumin</li>
<li>½ tsp. garlic powder</li>
<li>1 (28 oz) can stewed tomatoes</li>
<li>1 (28 oz) can crushed tomatoes</li>
<li>2 cups vegetable stock</li>
<li>3 tbsp. fresh chopped cilantro</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Heat a large soup pot over medium-high heat. Add the oil, jalapenos, bell peppers, onions, celery and garlic. Season with salt, cumin and garlic powder and sauté the veggies for about 10 minutes.</li>
<li>Add all of the tomatoes and stock and bring soup to a bubble. Reduce the heat to a simmer and stir in cilantro. Simmer for about 10 minutes.</li>
<li>Serve soup in large bowls with quesadilla wedges and a dollop of sour cream.</li>
<p>Serves 6</ol>

<p>For the quesadillas, I charred two poblano peppers  and zucchini rounds on an indoor grill pan, then removed the skin and seeds and sliced the peppers. Sprinkle cheddar cheese, poblano slices and zucchini rounds on a whole wheat tortilla, then sprinkle with chopped cilantro. Broil the quesadilla for a few minutes, the fold over and slice into wedges.</p>

			<content:encoded><![CDATA[<p>Nothing says summer to me quite like seafood. And living on the Gulf of Mexico, we certainly have an abundance. A while back I acquired about 15 lbs of shrimp and we&#8217;ve been eating at least a pound or two each week from our freezer. The Duke and I are going to turn flamingo pink, I suppose! <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Last week I wanted a fast, yet flavorful meal, and thus the Mediterranean Shrimp and Feta Tostada was born.</p>

<p>This dinner comes together in about 20 minutes&#8230;start to finish! I made a simple marinade for the shrimp using olive oil, red wine vinegar and other spices common in Mediterranean food. Be careful not to leave the shrimp in the marinade more than about 5 minutes. Otherwise, the acid in the vinegar will begin to &#8220;cook&#8221; the shrimp.</p>

<h2>Mediterranean Shrimp and Feta Tostadas</h2>
<h3>Ingredients</h3>
<ul>
<li>1 lb shrimp, peeled and deveined</li>
<li>2 tbsp. olive oil, divided</li>
<li>1 tbsp. red wine vinegar</li>
<li>½ tsp. dried oregano</li>
<li>¼ tsp. salt</li>
<li>¼ tsp. black pepper</li>
<li>½ onion, chopped</li>
<li>½ red bell pepper, chopped</li>
<li>2 whole wheat pitas, toasted</li>
<li>1 cup shredded Romaine lettuce</li>
<li>½ cup chopped cucumber</li>
<li>¼ cup feta crumbles</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Preheat a large non-stick skillet over medium-high heat.</li>
<li>While the pan heats, combine shrimp, 1 tbsp. of olive oil, vinegar, oregano, salt and pepper in a small bowl. Set aside.</li>
<li>Add remaining tablespoon of olive oil to pan, along with onions. Cook for about 5 minutes, until just soft. Add peppers and season with salt and pepper to taste. Cook an additional 5 minutes.</li>
<li>Push onions and peppers to the edge of the pan and add shrimp to the center. Cook until just pink on the first side, about 1-2 minutes. Flip shrimp and cook an additional minute, until cooked through.</li>
<li>Divide pitas among two plates and top each with half of the shrimp mixture. Top with lettuce, cucumber and feta crumbles.</li>

<p>I keep forgetting to give an update of my aunt. Believe it or not, she is doing a million times better and is expected to make a full recovery! This is nothing short of a miracle, since she was basically out of it for two weeks. She has no recollection that I was up there in her hospital room, but that is ok. <p>I&#8217;ve been drooling over a recipe from <a href="http://aggieskitchen.com/2010/04/01/fish-oreganata/">Aggie&#8217;s Kitchen</a> for months now, and it certainly makes for the perfect light, summery dinner. Aggie&#8217;s Fish Oreganata combines light and flaky fish (we have tons of fresh grouper and snapper from the Gulf of Mexico right now) with panko crumbs, lemon zest and fresh herbs. Doesn&#8217;t that sound divine?</p>

<h2>Grouper Oreganata</h2>

<h3>Ingredients</h3>
<ul>
<li>1 lb grouper, snapper or other mild white fish</li>
<li>2 tablespoons extra virgin olive oil</li>
<li>3/4 cup whole wheat panko crumbs</li>
<li>1/4 cup chopped fresh parsley</li>
<li>zest from one large lemon</li>
<li>3 tablespoons fresh lemon juice</li>
<li>3-4 garlic cloves, minced or pressed</li>
<li>1/4 teaspoon salt</li>
<li>¼ teaspoon dried oregano</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Preheat oven to 425 degrees. Cover a baking sheet with foil and then spray with non-stick spray.</li>
<li>Place the fish on the baking sheet. Combine olive oil, panko crumbs, parsley, lemon zest, lemon juice, garlic, salt and oregano in a bowl. Press the crumb mixture into the fish fillets making sure they are covered. Bake until the fish is just opaque in the center, about 10 minutes.</li>

Now, I&#8217;m not going to get crazy and commit myself to a weekly or monthly schedule of how-to&#8217;s, but I have at least one interesting tidbit to share with you now. <p>I don&#8217;t know if any of you live near a body of water that gives you access to lots of fresh shrimp, but here in Northwest Florida, we&#8217;re lucky enough to have two sources of shrimp: the Gulf of Mexico and the Choctawhatchee Bay (hopefully this oil slick won&#8217;t ruin our profitable and delicious seafood industry forever).</p>

<p>My mom and I actually prefer bay shrimp to gulf shrimp. They&#8217;re meatier, juicier and just all around better. Gulf shrimp are what you&#8217;ll find in every restaurant around here (and their iodine-y taste is just fine for the tourists), but bay shrimp are where it&#8217;s at! That being said, my mom brought me 15 pounds of beautiful shrimp the other day. Incase you&#8217;re wondering, that&#8217;s A LOT of shrimp! Clearly the Duke and I are weren&#8217;t going to eat it all before it went bad, so I had to freeze it. </p>
<p>I don&#8217;t take the heads off of my shrimp before I freeze them, but some folks do. The Duke&#8217;s mom does, so to each his own. </p>

<p>Since I leave the heads on, I obviously can&#8217;t freeze them in zip top bags, or the barbs would poke through. Instead, I freeze them in quart-sized plastic containers. </p>

<p>Fill the containers nearly to the top with shrimp.</p>

<p>Then COVER the shrimp with water.</p>

<p>Remember to leave a bit of room at the top of the container, because the water will expand slightly when it freezes. You can store the shrimp in any size container you like, just be sure to mark the contents of the container on the outside, so you&#8217;ll know what you&#8217;re pulling out of the freezer.</p>

<p>Don&#8217;t forget to write the date! Believe it or not, shrimp will keep in the freezer for up to four months.</p>

<p>Shrimp are the perfect food to have on hand in the freezer. They defrost very quickly, and cook up in a matter of minutes. Once they&#8217;re defrosted you can peel them and take the heads off before cooking. I&#8217;m so happy that our freezer is loaded down with these tasty shellfish, because I plan on cooking them up all summer long.</p>

			<content:encoded><![CDATA[<p>Yeah, yeah, yeah&#8230;you&#8217;ve heard the saying hundreds of times. In my case, it&#8217;s totally true. I know everyone has been on the &#8220;slider&#8221; bandwagon for ages now, and I can see why. A huge deli sandwich or mammoth hamburger is just too big a meal for little ole me (tehe&#8230;I&#8217;m not very little). Tiny silders make the perfect portion for lunch or dinner, along with a tasty side dish. And, if you&#8217;re big and burly like the Duke, you can have a few!</p>
<p>I was supposed to be blogging about a Tuscan Tuna Salad today, but I created these scrumptious little gems yesterday and just had to share.</p>

<p>Spinach Sliders with Marinated Veggies. Oh Yeah. Seriously. This little sandwich packs a serious punch. I passed the marinated veggie counter at the grocery store the other day and just had to scoop up some of the mushrooms, olives and feta cheese. Note-these are all foods that the Duke wouldn&#8217;t touch with a 50-foot pole. That&#8217;s perfect&#8230;more for me! <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<h2>Spinach Sliders with Marinated Veggies</h2>
<h3>Ingredients</h3>
<ul>
<li>6 whole-wheat slider buns</li>
<li>Fresh spinach leaves</li>
<li>1 cup mixed marinated vegetables, from grocery store or homemade (mushrooms, olives, artichokes, etc.)</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>On a clean cutting board, slice each bun in half. Layer on fresh spinach leaves, then top with a scoop of marinated veggies. You may need to slice some of the veggies before assembling sandwiches. Place bun tops on each sandwich and dig in.</li>
<p>Makes 6 sliders</ol>

It&#8217;s going to feel like Monday all day, but I&#8217;ll smile every time I realize it&#8217;s already Tuesday! <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I hope you all had a fabulous Memorial Day with your friends and family. I&#8217;d like to say a huge thank you to our brave men and women who defend this great nation every day. We could not enjoy our bountiful freedoms without you!</p>
<p>Since I had extra time on my hands this weekend, I made quite a few recipes for the blog. Figured I&#8217;d get ahead while I could, ya know? I&#8217;d been craving Chicken Parmesan for who knows how long, but I wanted to do a different spin on it. I ended up ditching the fattening bread crumbs and oil, and turned the whole dish inside out!</p>

<p>The result? A deliciously simple and light dish!</p>
<p>Start by butterflying your chicken breast and lightly browning on both sides&#8230;</p>

<p>Then spread each breast with a couple tablespoons of marinara sauce.</p>

<p>Fold the breast over, secure with a toothpick and stick in the oven.</p>

<h3>Ingredients</h3>
<ul>
<li>2 boneless and skinless chicken breasts</li>
<li>½ cup marinara sauce</li>
<li>2 slices mozzarella cheese</li>
<li>4 leaves fresh basil</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Preheat oven to 375 degrees. Spray a baking dish with cooking spray and set aside.</li>
<li>Heat a skillet over medium-high heat. While waiting for skillet to get hot, butterfly each of the chicken breasts, careful not to cut all the way through. Open up chicken breast and cover with wax paper. Using a rolling pin, mallet or pan, lightly beat chicken until the meat becomes thinner, about ½ inch thick.</li>
<li>Sprinkle both sides of the chicken with salt and pepper. Spray skillet with cooking spray, then add chicken. Cook for about 3 minutes per side. Chicken should be lightly browned, but not cooked all the way.</li>
<li>Remove chicken from pan and spread 1-2 tbsp. of marinara sauce over each breast, then top each with one slice of cheese and a few pieces of torn fresh basil.</li>
<li>Fold breasts over and secure with a toothpick.</li>
<li>Place chicken pieces on prepared baking dish and bake for 20-25 minutes, or until chicken is cooked through.</li>
<li>Top with remaining marinara sauce and serve with crusty bread and whole wheat pasta.</li>

<p>I served myself half a chicken roll up and it made for the perfect dinner portion. And the best part is I now have leftovers for lunch today.</p>

			<content:encoded><![CDATA[<p>The title of this post really says it all. As you know, we&#8217;re in the process of moving. Our closing actually got moved up to next Wednesday, so I guess that&#8217;s good. I&#8217;m really sick of packing, though. I like the idea of being in a new and exciting space, but actually loading up and moving out is driving me crazy! I wish there was a packing fairy that would come visit me. It would make my life so much easier. <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Since this has been a crazy week from hell, dinner has been really simple (AKA cereal most nights). I had a spark of energy the other night, though, and decided to use up some chicken and other ingredients from the fridge. You know the Duke and I love Mexican food, so I threw together a Chicken Fajita Hoagie.</p>

<p>Talk about simple. This dinner came together in about 20 minutes. I&#8217;m talking start to finish here, folks. I did have a cooked chicken breast on hand, which simplified the situation. The crusty bread was a delicious departure from a tortilla for the fajita flavors.</p>

<h2>Toasted Chicken Fajita Hoagie Melts</h2>
<h3>Ingredients</h3>
<ul>
<li>1 tbsp. olive oil</li>
<li>1/2 onion, sliced thin</li>
<li>½ bell pepper, sliced thin</li>
<li>½ tsp. garlic salt</li>
<li>¼ tsp. black pepper</li>
<li>½ tsp. oregano</li>
<li>1 whole wheat hoagie roll, split</li>
<li>1 chicken breast, cooked and shredded</li>
<li>½ cup grated cheddar cheese</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Heat a skillet over medium heat.</li>
<li>Once skillet is hot, add olive oil and onions. Cook until onions are translucent; about 8-10 minutes. Add bell peppers, salt, pepper and oregano and cook for another 4-5 minutes.</li>
<li>While peppers and onions cook, slice hoagie roll and lightly toast.</li>
<li>Sprinkle a small amount of cheese over toasted bread, then top with chicken, peppers and onions. Divide remaining cheese evenly among both slices of bread.</li>
<li>Broil hoagies, open-faced, for about 5 minutes, or until cheese is melted and bubbly.</li>
<li>Serve with salsa and sour cream.</li>

<p>I mixed 1/2 cup light sour cream with the juice of 1 lime, 1 tbsp. green salsa, a pinch of garlic salt and a handful of chopped cilantro for  quick dipping sauce. The sauce was delicious! 			<content:encoded><![CDATA[<p>Is it Monday again? Boo, hiss! I&#8217;m just ready to get these next two weeks over with. We&#8217;re taking Pre-K to Disney on Ice on Friday, which should be interesting. <img src='http://www.duchessoffork.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  My last assignment of the semester is due on Wednesday, so I&#8217;m ready to knock that out, too. I&#8217;ve been taking an ESOL class this Spring (teaching English to speakers of other languages). It&#8217;s yet another certification that is now required of most teachers.</p>
<p>Anyhoo, I thought I&#8217;d share this super simple and delicious weeknight meal with you. I&#8217;ve been on a huge zucchini kick lately. I seriously can&#8217;t get enough. I decided to stuff one of the green veggies with a creamy Mexican stuffing of chicken, black beans, Rotel, and, of course, CHEESE!!!</p>

<p>I was really impressed with this dish. And, when you&#8217;ve got cooked chicken on hand, it all comes together really quick. You start by scooping out the flesh of the zucchini.</p>

<p>You could chop up the zucchini flesh and add it to the stuffing, but I didn&#8217;t. You could also add the leftover zucchini meat to a batch of scrumptious zucchini bread.</p>
<p>I had to stop myself from eating the stuffing before these little boats went into the oven. I mean, how can you not like sour cream, chicken and cumin??</p>

<h2>Creamy Southwest Chicken Zucchini Boats</h2>
<h3>Ingredients</h3>
<ul>
<li>1 large zucchini, halved lengthwise</li>
<li>1 cup chopped cooked chicken</li>
<li>½ cup black beams, rinsed</li>
<li>½ cup Rotel</li>
<li>½ cup lite sour cream</li>
<li>½ tsp. garlic salt</li>
<li>½ tsp. cumin</li>
<li>½ cup shredded cheddar cheese, divided</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Preheat oven to 375 degrees. Spray a 9&#215;13 casserole dish with cooking spray.</li>
<li>On a clean work surface, scoop out flesh of zucchini, leaving a ¼ inch border (if you scoop all the way to the skin, the zucchini won’t hold up in the oven). Reserve zucchini flesh for another use, if desired.</li>
<li>In a medium bowl, combine chicken, beans, Rotel, sour cream, salt and cumin. Stir in ¼ cup of cheese.</li>
<li>Divide mixture evenly between the two zucchini halves. Sprinkle with remaining cheese.</li>
<li>Bake for 25-30 minutes, or until zucchini is cooked through.</li>
<li>Serve with hot brown rice.</li>

<p>Oh, boy, do I ever have a fabulous soup recipe for you today! I know most people think of soup in the fall and winter when there&#8217;s a nip in the air, but the Duke LOVES soup. He could eat it every day. That being said, I like to play around with soups every now and then. This is one of our all-time favorites. It&#8217;s a chunky white bean and chicken soup that I found in Cooking Light over a year ago.</p>

You know how much I love Mexican flavors, so I was all over this recipe from the first time I saw it. It&#8217;s thick, its spicy, it&#8217;s satisfying, and it couldn&#8217;t be any easier! This is the perfect way to use up any leftover chicken that you may have on hand. The soup calls for a whopping SIX ingredients. I think you can handle it!</p>

<h2>Southwestern Chicken and White Bean Soup</h2>
<h3>Adapted from Cooking Light </h3>
<h3>Ingredients</h3>
<ul>
<li>2 cups cooked and shredded chicken breast</li>
<li>1 tbsp. taco seasoning</li>
<li>cooking spray</li>
<li>2 (14 oz) cans fat-free, reduced sodium chicken broth</li>
<li>1 (16 oz) can cannelloni beans, rinsed and drained</li>
<li>1 cup green salsa</li>
<li>1 (4 oz) can chopped green chiles</li>
<li>Sour Cream, cilantro and crushed tortilla chips for garnish</li>
</ul>
<h3>Instructions</h3>
<ol>
<li>Combine chicken and taco seasoning and toss to coat. Heat a large pan over medium-high heat and spray with cooking spray. Add chicken to pan and sauté 2 minutes. Add broth to pan, scraping to loosen browned bits.</li>
<li>Place beans in a small bowl and mash until only a few whole beans remain. Add beans, salsa and chiles to pan, stirring well.</li>
<li>Bring to a boil, then reduce heat and simmer for 10 minutes, or until thickened slightly.</li>
<li>Serve with sour cream, cilantro and crushed tortilla chips if desired.</li>

<p>I can&#8217;t tell you how many times I&#8217;ve made this soup. I&#8217;ve even taken it to friends with newborns or when friends move. Who doesn&#8217;t love a hot meal delivered to their front door? Bake up a few corn muffins for the side and you&#8217;ll be cooking with gas. </p>
